Breakfast Chicken Sausage

These Breakfast Chicken Sausage patties are the perfect healthy start to your morning. Made with mushrooms, green onions, sage, thyme and a dash of maple syrup for the ultimate healthy breakfast sausage.

Ingredients
  

  • 1 lb ground chicken
  • 10 cremini mushrooms chopped
  • 4 green onions chopped
  • 1 tablespoon maple syrup
  • 1 ½ teaspoon of flaky sea salt
  • ½ teaspoon black pepper about 6-8 grinds
  • 1 teaspoon dried sage
  • ½ teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 2 tbsps olive oil for sautéing

Instructions
 

  • Heat a cast iron skillet to medium heat while you prepare the sausage patties. Chop mushrooms finely and sauté with a dash of olive oil until cooked, about 3 minutes. Remove mushrooms from the skillet, place in a bowl and set aside. Keep the skillet on low while you shape the patties.
  • Slice the green onions and place in a medium bowl with the ground chicken, maple syrup, salt, black pepper, sage, thyme, garlic powder and cooked mushrooms. Mix with hands until combined.
  • Roll the chicken mixture into patties and place on a baking sheet (makes about 8-10 patties).
  • Lightly drizzle the skillet with olive oil and cook the patties 3-4 minutes per side or until 165°F internally.
  • Here, I am serving my sausage patties with a fried egg, sliced beefsteak tomatoes and topped with green onions. Enjoy!
