Sweet Pea Casserole Recipe

If you are looking for that classic homemade taste of sweet peas, but with homemade french onions, you will love my Sweet Pea Casserole Recipe! My take on this classic is healthier using organic and fresh ingredients.

Ingredients
  

Sweet Pea Casserole:

  • 1 lb frozen or canned sweet peas thawed and drained
  • 1 10.5 oz can of cream of mushroom soup I use the Organic Pacific Foods brand
  • ½ c sour cream
  • ¼ cup butter melted
  • 2 cloves garlic minced
  • 1 c cheddar cheese or mexican cheese blend
  • 1 ½ teaspoon salt
  • ¼ teaspoon black pepper

French Fried Onions Topping:

  • 1 medium white or yellow onion
  • 1 c buttermilk
  • 2 c flour
  • ½ - 1 teaspoon salt
  • ½ teaspoon onion powder
  • ¾ - 1 c avocado oil

Instructions
 

  • Heat the oven to 375°F. In a 8x8 square baking dish, grease with softened butter or a neutral cooking spray and set aside.
  • Peel and thinly slice your onions with a sharp knife or mandolin. Place into a large bowl with the buttermilk to marinade and set aside. For a more even cook on the onions, separate the onion slices as much as possible.
  • Add about ½ c of avocado oil to a large saucepan and bring to medium heat.
  • While your oil is heating, melt butter in a small bowl. In a large bowl combine the drained sweet peas, cream of mushroom soup, sour cream, melted butter, minced garlic cloves, salt and pepper.
  • Spoon mixture into the baking dish and spread into an even layer. Top the green pea casserole with the shredded cheese. Bake for 35-40 minutes until warmed through and the cheese is melted.
  • While the green pea casserole is baking, combine your flour, 1 ½ teaspoon salt and onion powder into a medium bowl or shallow dish.
  • Remove the onions from the buttermilk and shake off the excess liquid. Dredge the buttermilk soaked onions in the flour mixture until fully covered. Continue this in batches and shake off excess flour before placing in the oil.
  • Fry the onions in the oil until golden brown for 3-5 minutes. Use the rest of the avocado oil for the next batch to finish cooking the onions.
  • You may need to separate the onions with tongs as they cook. If the onions are getting too crispy or not brown enough, adjust your heat as needed throughout the cooking process.
  • When the onions are done, place on a baking sheet or large plate lined with paper towels when done. Finish with ½ - 1 teaspoon of flaky salt to taste.
  • Once your green pea casserole is fully baked, top with the french fried onions and enjoy!
