This Healthy Breakfast Toast is wholesome, heartwarming and the perfect start to your day. It’s a shakshouka breakfast, with this traditional sauce on warm toast, topped with feta and a fried egg.

Ingredients
  

For the Toast:

  • 4 slices of sourdough or crusty bread
  • 4 eggs
  • 2 pats of butter
  • ¼ c feta cheese
  • 2 tablespoon parsley chopped

For the Shakshouka Sauce:

  • ¼ onion chopped
  • 1 red bell pepper chopped
  • 2 garlic cloves minced
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • Pinch of chili powder
  • ½ teaspoon flaky sea salt
  • ¼ teaspoon ground pepper about 6 pepper grinds
  • 1-2 teaspoon calabrian chilis can opt for red pepper flakes, add to your preferred spice level
  • 1 14.5 oz can crushed tomatoes
  • 1 tablespoon olive oil

Instructions
 

  • Heat a skillet to medium heat and melt a butter pat and toast the bread lightly 1-2 minutes per side. Remove from the skillet, add the olive oil and sauté the chopped onions and bell peppers for 3 minutes.
  • To the skillet, add minced garlic, calabrian chilis, paprika, cumin, chili powder, salt and pepper. Sauté together and then add the can of crushed tomatoes. Simmer on low for 8-10 minutes until the sauce thickens, set aside. Fry or poach 4 eggs using the remaining butter for the toast topping.
  • Top your toast with the shakshouka sauce, feta cheese, fried egg and chopped parsley. Enjoy!
