Ingredients
- Blueberries: Fresh blueberries work best here for muddling since you want that real, bright fruit flavor. You can also freeze a few blueberries in an ice cube tray for the most adorable blueberry ice cubes!
- Rosemary: Use a fresh rosemary sprig for the best herby flavor. Dried rosemary will not give you the same result, so fresh is the way to go here.
- Lemon: You will use both lemon peel and fresh lemon juice for this recipe! The lemon peel adds a bright citrus note when muddled while the juice adds that little hit of acid that makes everything pop.
- Simple Syrup: I like to use an organic lower sugar simple syrup here to keep things balanced and not overly sweet. You could also use honey or pure maple syrup!
- Blue Sugar Rim: This step is completely optional, but it is so fun! I mix a few drops of dye-free blue food coloring into plain sugar for the most beautiful rim that uses no artificial dyes. I love the Watkins natural food coloring, you can find it at most grocery stores or Target!
- Sparkling Water: Plain sparkling water works great here. You could also use a lemon sparkling water or a light sparkling lemonade for extra citrus flavor!

Instructions
Step 1: For the blue sugar rim, combine 5-6 drops of dye-free blue food coloring with a few spoonfuls of sugar on a small plate and mix until the color is evenly distributed throughout the sugar.
Step 2: If making blueberry ice, add one blueberry to each mold of an ice cube tray, pour in water, and freeze until hardened. This can be done ahead of time!
Step 3: To sugar the rim, drizzle a small amount of simple syrup on a plate and press the rim of your glass into the syrup. Then dip the rim into the blue sugar until fully coated.

Step 4: To the glass, add the blueberries, lemon peel, lemon juice, simple syrup, and rosemary sprig. Using a muddler or the back of a wooden spoon, muddle everything together, smashing the blueberries until they are broken down and combined with the other ingredients.

Step 5: Add your ice (blueberry ice if you made it!) and top with sparkling water.

Step 6: Garnish with a fresh rosemary sprig and a few blueberries. Enjoy!

You want to press and twist the rosemary sprig a few times to release those herby oils without shredding the leaves into the drink. This mocktail is best enjoyed right after making since the sparkling water will lose its fizz over time. If you need to prep ahead, muddle the blueberries, lemon, rosemary, and simple syrup together and store in a sealed container in the fridge for up to 24 hours. When ready to serve, add ice and top with fresh sparkling water!
