Rosemary Blueberry Smash Mocktail

This rosemary blueberry smash mocktail is so good and comes together in just 5 minutes with real, fresh ingredients! Muddled blueberries, lemon, and rosemary are topped with sparkling water for the most refreshing sip. It is light, not overly sweet, and that blue sugar rim makes it absolutely stunning!

Ingredients
  

  • 10 blueberries
  • 2 inches lemon peel
  • 2 teaspoon lemon juice
  • 2 tablespoon simple syrup
  • 1 rosemary sprig
  • 4 oz sparkling water
  • Blueberry ice optional

For the Blue Sugar Rim:

  • 5-6 drops dye-free blue food coloring
  • 2-3 tablespoon sugar

Instructions
 

  • For the blue sugar rim, combine 5-6 drops of dye-free blue food coloring with a few spoonfuls of sugar on a small plate and mix until the color is evenly distributed throughout the sugar.
  • If making blueberry ice, add one blueberry to each mold of an ice cube tray, pour in water, and freeze until hardened. This can be done ahead of time!
  • To sugar the rim, drizzle a small amount of simple syrup on a plate and press the rim of your glass into the syrup. Then dip the rim into the blue sugar until fully coated.
  • To the glass, add the blueberries, lemon peel, lemon juice, simple syrup, and rosemary sprig. Using a muddler or the back of a wooden spoon, muddle everything together, smashing the blueberries until they are broken down and combined with the other ingredients.
  • Add your ice and top with sparkling water.
  • Garnish with a fresh rosemary sprig and a few blueberries. Enjoy!
