Tri-Color Carrots

These easy Tri-Color Carrots with parsley and garlic are such a fun and easy twist on this traditional side!

Ingredients
  

  • 1 ½ lbs tri-color carrots
  • 3 tablespoon parsley chopped
  • 1 ½ teaspoon flaky salt
  • ¼ teaspoon black pepper about 6 pepper grinds
  • 2 garlic cloves minced
  • 2-3 tablespoon olive oil

Instructions
 

  • Preheat the oven to 425°F. Wash and peel the carrots. Chop into about 2 inch pieces and into quarters ensuring all carrots are around the same size. Add one tablespoon olive oil to the sheet pan and coat evenly.
  • Chop the parsley and mince the garlic cloves. Add the remaining olive oil to the carrots. Evenly spread parsley, salt, pepper and garlic over the carrots and toss to coat. Bake for 25-30 minutes until fork tender. Enjoy!
