Ingredients:

- Wild-caught salmon fillets: For the fresh salmon and the best quality fish, use wild salmon fillets.
- Fresh cilantro: Fresh cilantro works best to brighten the dish and pairs perfectly with the lemon flavors.
- Olive oil: I primarily use olive oil when cooking, I also love using other healthy fats like coconut oil, avocado oil, beef tallow or ghee.
- Flaky sea salt: Flaky sea salt works best, giving you that even a beautiful flavor for your cilantro salmon.
- Ground pepper: I like to use a pepper grinder for my savory dishes, it tastes so fresh!
- Lemon: Use a whole fresh lemon for the juice and lemon slice on top. You could also use lime juice if you prefer a cilantro lime salmon.
- Broccoli head: Use a large broccoli head, remove the stem and chopping the broccoli into florets.
Instructions
- Preheat the oven to 425β.
- Chop cilantro and place in a small bowl with 2 tablespoon of olive oil, sea salt, pepper and lemon juice. Stir to combine and set aside.

3. Chop the broccoli, remove the large stalk and chop into smaller florets.
4. Lightly drizzle 1 tablespoon of olive oil on a sheet pan and place the salmon down first, skin side down. Pour β of the salmon cilantro sauce on top of the salmon filets to coat all over the top of the salmon.

5. Add one lemon slice on top of each piece of salmon.

6. Add the chopped broccoli to the side of the sheet pan and lightly drizzle the broccoli with olive oil, salt and pepper.
7. Bake in the oven for 15-18 minutes or until the Salmon is 145β internally.
8. Top your salmon with the remaining cilantro lemon sauce and enjoy!

Top Tip
Pat down the salmon with a paper towel to ensure it is dry before adding your seasoning and olive oil to the baking sheet.
The baking time on the salmon with vary based on the thickness of your salmon. Be sure to check your internal temperature after 13 minutes or so to ensure even cooking. Let the salmon rest for at least 3 minutes before serving for the perfect juicy salmon.

Baking Sheets: I like to use stainless steel baking sheets or ceramic non-stick for all of my cooking needs!
Storage
You can store the salmon and vegetables in an airtight container in the fridge for 2-3 days. If re-heating, it will taste best re-heated in the oven.

Cilantro Salmon
Ingredients
For the Salmon:
- 1 lb wild-caught fresh salmon fillets
- 4 tablespoon fresh cilantro chopped
- 2 tablespoon olive oil
- 1 Β½ teaspoon flaky sea salt
- β teaspoon of pepper
- Juice of Β½ large lemon about 2-3 tsp
- Lemon slices for garnish
- 1 additional tablespoon olive oil for sheet pan
For the Broccoli:
- 1 broccoli head chopped into florets
- 1-2 tablespoon olive oil
- Β½ teaspoon flaky sea salt
- Sprinkle of black pepper
Instructions
- Preheat the oven to 425β.
- Chop cilantro and place in a small bowl with 2 tablespoon of olive oil, sea salt, pepper and lemon juice. Stir to combine and set aside.
- Chop the broccoli, remove the large stalk and chop into smaller florets.
- Lightly drizzle 1 tablespoon of olive oil on a sheet pan and place the salmon down first, skin side down. Pour β of the salmon cilantro sauce on top of the salmon filets to coat all over the top of the salmon.
- Add one lemon slice on top of each piece of salmon.
